We bought an inexpensive smoker about 30 years ago and art still using it. We don’t use it often but it works perfectly when we want it.
There’s nothing at all fancy or hi-tech about it.
But it makes great smoked salmon or smoked pasta or this smoked chicken.
We burn wood in it so it can get a little hot which is why this chicken is a little dark – but not burnt.

Notes
If you don’t have a smoker you can add wood chips to a charcoal grill to create smoke, and reduce cooking time. Try to keep the heat low.
