Grilled Turkey Aioli, summer festivals

Thyme for Cooking Posted on August 7, 2019 by KateOctober 22, 2019
Turkey Alioli

This is not proper aioli. This is a marinade and basting sauce for grilling. I am not going to go through the effort of making a proper aioli or allioli to have it cooked on a barbecue. For the curious….. Aioli is, usually, the French version of a garlic and olive oil emulsion and is often made with an egg yolk. Allioli is, usually, the Catalan or Spanish version, is … Continue reading →

Allioli, Grilled Potatoes with Allioli; egg fatalities

Thyme for Cooking Posted on August 12, 2016 by KateOctober 1, 2017

It’s summertime and many a cooks’ thoughts turn to salmonella. And most thoughts about salmonella center around eggs. I was once told that more people die in Spain in the summertime from salmonella than from car accidents. If you have ever driven in Spain you would you would appreciate the horror of that statement. The basis is as follows: Many things in Spain, especially in summer, are served with mayonnaise … Continue reading →

Artichokes: preparing, cooking, eating, & 4 dipping sauces

Thyme for Cooking Posted on April 10, 2011 by KateAugust 11, 2013

The 'A vegetables' have arrived. Mon mari is an avid lover of the 'A's. Three colors of asparagus; three kinds of artichokes and two kinds of avocados. It's vegetable heaven. Add in my favorite green garlic and it's a pretty intense veggie time. (Not to be sacrilegious, but this is the second proof that god is not a woman: asparagus and artichokes both at the same time?  And only for … Continue reading →

Eggs: Refrigerate or not? Caesar Salad; Allioli

Thyme for Cooking Posted on July 4, 2010 by KateOctober 2, 2017

To refrigerate or not to refrigerate; that is the question. Whether ’tis nobler in the mind to suffer…. Oops, wrong soliloquy. It’s summertime and many a cooks’ thoughts turn to salmonella. And most thoughts about salmonella center around eggs. I was once told that more people die in Spain in the summertime from salmonella than from car accidents. If you have ever driven in Spain you would you would appreciate … Continue reading →

Grilled Chicken Aioli; The Updates…..

Thyme for Cooking Posted on July 13, 2009 by KateAugust 28, 2020

Serendipity! Today, after dropping mon mari off at the hospital for his check-up (they DO like to do a thorough job) I got 2 letters in the post. The first, from our top-up carrier (for those who don’t know, the French medical system does not provide 100% coverage.  There are deductibles and co-pays.  One buys ‘top-up’ insurance for another 100 or so euros per month to cover these bits). Without … Continue reading →

Aioli or Allioli; Festa Major

Thyme for Cooking Posted on July 14, 2008 by KateOctober 20, 2017
Allioli

Allioli One of the things I miss about Andorra is the Festa Mejor Major. We have nothing like that here in bucolic France. Every hamlet, village, town and city in Spain and Andorra has their own Fest Major in the summer.  Where we lived, Andorra/Catalonia, the celebration normally went on for 4 days.  There were rides and games for the kids; food, parties and dances for the adults. Our little … Continue reading →

Allioli; Aioli…What’s in a name? An egg yolk!

Thyme for Cooking Posted on July 30, 2007 by KateJune 9, 2013

Go directly to recipe One of the guys I played golf with in Andorra was Spanish.  Yeah, I played with the guys.  What can I say, I've always been one of the guys.  I'm just not a girlie-girl, although I can tie a scarf with the best of them (I am French, after all…see previous post) and I am rather fond of shoes….. Luis was a proper Spaniard and spoke … Continue reading →
