Cod, Baked with Tomatoes & Capers; weeds

Cod with Tomatoes

Even though mon mari professes to hate fish we still have it at least once every week. As long as it doesn’t have bones he’s happy…. sort of. He’s always happy when he can cook it on the barbecue in the summer. In the winter, cooking it in the kitchen requires more creativity. Thankfully, he loves capers almost as much as grilling. I add capers – he’s happy. Or, at … Continue reading →

Baked Cod with Tomato Fennel Sauce; he’s back…

Thyme for Cooking Posted on March 3, 2017 by KateMarch 3, 2017

It’s time to clean out the vegetable freezer. It’s almost empty now, anyway. I usually defrost it around the first of March and turn it off until June when I start making soup from the excess spinach. By September it’s so full I couldn’t squeeze a stray sage leaf in. As usual, the last few bags are tomatoes, in this case cherry tomatoes. I had so many one day after … Continue reading →

Baked Cod with Red Peppers and Olives, the update

Thyme for Cooking Posted on January 20, 2014 by KateJanuary 20, 2014

I was in a Moroccan mood this weekend…. As usual, we had to have fish on Friday.  Mon mari would be so disappointed if we didn’t have fish. I grabbed my big Moroccan cook book and started looking. As usual, I couldn’t find anything that was ‘just right’. As usual, I improvised. Even mon mari was pleased. Baked Cod with Red Peppers and Olives Total time: 35 minutes Ingredients: 12oz … Continue reading →

Red-Cooked Cod with Fennel, Carrots and Leeks, the update

Thyme for Cooking Posted on October 28, 2013 by KateMay 10, 2017

It’s official…. Grilling season is over. Daylight saving time is over Fuel is being delivered tomorrow. We have a fire in the fireplace. The mice have all moved in…. Summer is over. To celebrate I made mon mari’s favorite: Fish! Okay, he hates fish…. but he loves anything stir-fried so it was a compromise. Red-Cooked Cod with Fennel, Carrots and Leeks otal time: 25 minutes Ingredients: The fish: 12oz (360gr) … Continue reading →

Grilled Cod with Horseradish Mustard Sauce

Thyme for Cooking Posted on July 14, 2012 by KateOctober 15, 2018

We’re expanding our fish repertoire. Mon mari‘s caveat is ‘No bones’. We eat a lot of salmon… But, sometimes, a little variety is nice. I get the ‘back’ of cod.  It has no bones. We’re both happy. Best part – it’s ready in 15 minutes! Grilled Cod with Horseradish Mustard Sauce Total time: 30 minutes Ingredients: 2 filets of cod, or other thick, firm white fish, 12oz (350gr) total weight … Continue reading →

Grilled Cod with Caper, Green Olive Tarter Sauce

Thyme for Cooking Posted on June 8, 2012 by KateAugust 11, 2013

Mon mari is being brave. We are expanding our fish repertoire…. as long as it doesn't have bones. I get a long piece of cod 'back' that is without bones and perfect for grilling.  Cut it in half for easier handling and serving. Mon mari always tosses a few wet wood chips om the coals to add a bit of smoke flavor. Grilled Cod with Caper, Green Olive Tarter Sauce … Continue reading →

Bacalao a la Marinera (Fisherman’s Cod); Has Elvis left the building with Michael?

Thyme for Cooking Posted on November 6, 2009 by KateOctober 21, 2017

Apparently Michael Jackson has left the building…. With Elvis, perchance? For the last two weeks we have been inundated with commercials advertising a big TV seance this weekend to contact Michael Jackson. Concerned fans wanting to find out how he’s doing ‘on the other side’? As I was listening to the ad for the billionth time it occurred to me how much Michael and Elvis have in common: Both died … Continue reading →
