Tuna Avocado Enchiladas; fusion?

Thyme for Cooking Posted on March 3, 2019 by KateFebruary 24, 2020
Tuna Enchiladas

One of the few things I miss here is a good Mexican restaurant. Actually, I’d be happy with a bad Mexican restaurant. When we lived in Minneapolis we used to go to a hole-in-the-wall called Little Tijuana. I have no idea if it’s still there. I first went while I was in college so it’s been around a long time. It’s the kind that would be on Diners, Drive-Ins and … Continue reading →

Beef and Spinach Enchiladas; they’re great…. trust me

Thyme for Cooking Posted on January 29, 2017 by KateOctober 23, 2017

I know spinach is not a traditional filling for enchiladas. Consider these ‘alternative enchiladas’. Actually, no…. I just changed my mind. Many people think that black beans, jalapeño peppers and avocados are classic enchilada fillings. They are misinformed. They have been reading fake recipes and watching fake cooking shows. Spinach is, has been, and always will be the best kind of enchilada. Everyone loves them. Trust me. I’m smart. Beef and … Continue reading →

Chicken and Ricotta Enchiladas; deviant behavior; weekly menu

Thyme for Cooking Posted on February 11, 2011 by KateOctober 23, 2017

I make everything from scratch. I pride myself (harrumph) on not using prepared foods. You will never see a Tator Tot soaked in Cream of Mushroom Soup cross my lips. I don't buy frozen pizzas or canned soups or bottled salad dressings. I am above all of that convenience stuff….. Until it comes to Enchiladas….. I love enchiladas….. I always buy the tortillas (no big deal). And I always buy … Continue reading →

Turkey and Black Bean Enchiladas; the update

Thyme for Cooking Posted on March 1, 2010 by KateOctober 23, 2017

I could have run around the house taking pictures of the 2nd coat of white paint on the bathroom ceiling; or the corner tile in the kitchen behind the stove that was re-glued (it may not be a word in your house but it most definitely is in our house) but it hardly seemed like a riveting blog post. Neither did the window sill in the kitchen or the trim … Continue reading →

Chicken and Avocado Enchiladas; My Kitchen

Thyme for Cooking Posted on September 20, 2009 by KateApril 11, 2018

I miss my kitchen. Since I have been gone I have eaten some excellent food in restaurants. And some not so good. I have eaten lunches consisting of nothing but two apples; and one of nothing but a Double Chocolate Fudge Brownie. I’ll leave you to guess which was better…. I’ve cooked in my sis’s kitchen – She who does not now nor ever has owned a sharp knife. I … Continue reading →
