I’m sure all the American cooks are spending this last day before the big Turkey Bash searching for new recipes. Okay, maybe not….. But if you just need one more, here it is. It can all be done ahead and baked / reheated at the last minute. Happy Thanksgiving to all of you on that side of the pond! Cauliflower Gratin; the update

Thyme for Cooking Posted on October 7, 2013 by KatieMay 10, 2017

Usually this time of year I have a cellar full of butternut and acorn squash with green beans, tomatoes, zucchini and chard still growing in my potager. This year, the potager is done and I have 4 each butternut and acorn squashes. Pathetic… On the other hand, that means that we get to eat other vegetables. We get to eat vegetables that I don’t grow. Like cauliflower. Usually we don’t … Continue reading →

Salmon, Cauliflower and Quinoa Gratin; processed food

Thyme for Cooking Posted on February 1, 2013 by KatieOctober 23, 2017

This is another dish from my French gratin cook book – so the original recipe was a bit rich… And it served four. I tweaked and substituted and cut back….. I added quinoa, reduced the salmon, added smoked salmon and substituted yogurt for heavy cream…. It was still more than enough for the two of us. I would say this would serve three nicely… Or two, with leftovers for lunch. … Continue reading →

Carrot and Basmati Rice Gratin

Thyme for Cooking Posted on November 4, 2012 by KatieJuly 7, 2014

We all know carrots are good for us…. They’re full of antioxidants, beta-carotene and vitamins plus they help fight cancer and reduce the risk of cardiovascular disease. So why are they such a neglected vegetable? No one talks about carrots. Everyone talks about chard and spinach and all the other dark leafy greens. We all love broccoli and cabbage and cauliflower and all the other cruciferous veggies.  We can’t get … Continue reading →

Duck Confit and Potato Gratin

Thyme for Cooking Posted on February 27, 2012 by KatieOctober 23, 2017

We have a floor. Mostly. The bit at the top of the stairs isn’t finished yet, but I suggested, and mon mari agreed, that perhaps the railing could be next…. For obvious reasons… But the rest is done, with two coats of varnish on it, so far. I’m so pleased with it I thought I’d post lots of views. Remember my complaining about the dust?  This is the gap between … Continue reading →

Salmon, Smoked Salmon and Potato Gratin; The Menu

Thyme for Cooking Posted on February 25, 2011 by KatieOctober 23, 2017

A friend of my sister is planning a trip to Ireland.  As we lived there for a year, she asked for recommendations. After a long meander down memory lane I decided one of the things I missed most was riding our bikes to Great Island (Cobh) to get smoked salmon.  We would take the car ferry across the harbour, ride to the house a neighbor had told us about, go … Continue reading →

Butternut Squash, Leek and Rice Gratin; the update

Thyme for Cooking Posted on February 21, 2011 by KatieNovember 20, 2019

Yes, I’m still finding new ways with my never-ending butternut squash. But first – we have actual, visible, easy-to-see proof that we worked last week. We papered. Because he had to cut the sheet rock panels in half to get them upstairs, they were missing the beveled edge needed for a smooth finish.  Paper seemed the logical choice. You can’t really tell – but I was very pleased when I … Continue reading →
