Spaghetti with Shrimp, Spinach; tomatoes

Thyme for Cooking Posted on May 3, 2019 by KatieOctober 23, 2019
Spaghetti with Shrimp, Spinach

We’ve been eating a lot of shrimp lately. There are three simple reasons…. We like shrimp. I can now buy cleaned shrimp. Mon mari was not overly fond of cleaning shrimp and I can’t. I have no problem eating shrimp but my hands break-out in a rash if I clean them. (My story and it’s worked for years.) The weather hasn’t been nice enough for him to grill salmon. He … Continue reading →

Vieux Carré Scampi; recipe cards

Thyme for Cooking Posted on April 17, 2019 by KatieOctober 2, 2020

I do not call this ‘Shrimp Scampi’ because that would be redundant. Scampi is Italian for shrimp…. I would be calling it ‘Shrimp Shrimp’. Like Chai (meaning tea) Tea. Or PIN (Personal Identification Number) number. Or ATM (Automated Teller Machine) machine Or Queso (Spanish for cheese) cheese. You get the point. This is based on one from a ‘box’ of recipes I got years ago. There was no mention of … Continue reading →

Niçoise-Style Asparagus Salad; philosophical words

Thyme for Cooking Posted on June 10, 2018 by KatieMay 29, 2019
Niçoise-Style Asparagus Salad

This is one of our favorite spring salads. It has all the right ingredients: fresh greens, asparagus and green garlic. Add capers, olives and tomatoes and I could easily eat it every day at least once. Sadly, I’m forced into buying my salad greens this year but at least I have a lot of choices at the market. And, as I learned while living in Andorra, even if it’s not … Continue reading →

Veal Scallops with Green Garlic and Capers; no pool yet

Veal with Green Garlic, and Capers

Some thing we all strive for, or at least should strive for as we get older, is to know ourselves. When I was younger I used to enjoy spending hours in the kitchen cooking. In the 2 or 3 or 4 hours leading up to dinner I would happily bone chickens, make pasta from scratch, do fancy vegetables, and so on. I am no longer happy to do that. Well, … Continue reading →

Asparagus and Ham Risotto; pansies

Thyme for Cooking Posted on May 13, 2018 by KatieMay 13, 2018
Asparagus and Ham Risotto

Spring and fall are seasons of firsts and lasts in our kitchen. This is the last risotto of the season, made with the last of the green asparagus and the first of the fresh herbs. Because the weather has been typical of May (cold rain followed by hot sunshine followed by cold rain and so on…) it’s not a good time of year for planning. At noon, with the sun … Continue reading →

Turkey Rolls Stuffed with Asparagus; love from Bologna

Turkey Rolls Stuffed with Asparagus

I decided to make these for dinner the other night. I went on to my blog to grab the recipe and realized it didn’t have a print option. To make life easier for me the next time I want to make them I decided to fix that. For all of you who have not seen the recipe or thought about making turkey rolls…. Consider this a reminder. It’s worth repeating. … Continue reading →

Pan-Fried Salmon with Green Garlic and Capers; dogs on the walk

Thyme for Cooking Posted on April 13, 2018 by KatieJuly 23, 2019
Pan-Fried Salmon with Green Garlic

It’s Friday, so that means we’ll be eating fish of some sort. It’s spring, so that means we’ll be eating lots of green garlic. What to do…. what to do….. Add some lemon, capers, butter, and olive oil and we’re happy eaters in less than 30 minutes. You can’t find green garlic? Oh, that is too bad…. Well… you can wait a few months and make it with garlic scapes. … Continue reading →
