Lentil Soup; the art of learning new stuff

Thyme for Cooking Posted on March 4, 2020 by KatieMarch 4, 2020
Easy Lentil Soup

Mon mari had a cold a few weeks ago. When he’s feeling ‘less than 100%’ he likes to be left alone. For him, that means that if / when he’s hungry he’ll fix himself something to eat – usually soft-boiled eggs. If he wants something from me he’ll let me know otherwise leave him alone. For me, that means that I am cooking for one so I immediately get to … Continue reading →

Lentils with Butternut Squash; scraping update

Thyme for Cooking Posted on February 9, 2020 by KatieFebruary 9, 2020
Butternut Squash and Lentils

I rarely buy fresh vegetables until my winter squashes are gone but I can vary our diet a bit by using pantry staples. I always have lentils on hand, usually 3 or 4 different kinds. They don’t need soaking and cook much faster than dried beans, usually in about 20 minutes. The red or coral lentils cook much quicker and are great for thickening soups or stews. I appease my … Continue reading →

Southwestern Lentils, lentils in the summer?

Thyme for Cooking Posted on June 9, 2014 by KatieJune 11, 2014

I had something similar to this in a restaurant in San Antonio, Texas, thus the ‘Southwestern Lentils’. I don’t remember the restaurant or the name of the dish and I never got the recipe.  This is as close as I get to a return trip to San Antonio – I remember it as a lovely city.  Make them as hot as you like.  I use the tiny, green lentils de … Continue reading →

Three Lentil Soup with Butternut Squash and Ham

Thyme for Cooking Posted on October 14, 2013 by KatieJanuary 16, 2020

It’s been a crazy few days. Saturday I butchered and processed the pumpkin I bought on Friday – getting ready for Christmas. Pictures on Wed. Yesterday was consumed with technical difficulties. You don’t want to know… To take a break from the problems in hopes that they would miraculously fix themselves, I went down to work in my little woods. I didn’t do any trimming last fall. It’s not that … Continue reading →

Lentils with Feta and Olives; planning an herb garden

Thyme for Cooking Posted on March 22, 2013 by KatieAugust 10, 2013

I love lentils. They don’t need soaking, cook in just 30 minutes, are full of all the good stuff we should eat and they’re delicious. So…. Why don’t I make them more often? I don’t make them in the summer because we eat from the potager. I don’t make them in the fall because we’re eating the harvest. I don’t make them in the winter because I’m so sick of … Continue reading →

French Potato Salad

Thyme for Cooking Posted on May 27, 2012 by KatieOctober 23, 2017

We did something today that we haven't done in ages…. Or ever, actually. We forced the puppies into the back of the car and went on an outing. They haven't been in the car since they were spayed last fall…. We want to go visit our friend in Spain, and the puppies get to visit their mom, brother, granny and great-uncle. They need to get in the car in order … Continue reading →

Moroccan Lentils and Butternut Squash; snowed in

Thyme for Cooking Posted on February 6, 2012 by KatieFebruary 9, 2020

I’ve been ‘snowed in’ when I lived in Wisconsin – 24 inches (60cm) of fine, blowing snow followed by temperatures far below zero. I’ve been ‘snowed in’ when I lived in Minnesota – 2 days of wind and snow, piling the drifts over the cars and half way up the windows on the house. These were proper blizzards, the kind that, after a full day of shoveling to the car, … Continue reading →
