Spicy Pork Chops, Red Peppers and Tomatoes, Slow Cooker; it’s cold out there

Thyme for Cooking Posted on January 30, 2019 by KateJanuary 8, 2020
Spicy Pork, Peppers, Tomatoes

We had this over pasta. Had I been ambitious, I would have shredded the pork and added it to the sauce. I wasn’t. Mon mari added sambal oelek to his. I didn’t do that either….. Apparently I’m easy to please. I stirred this after about 4 hours, but if you just give it a stir 30 minutes before serving it will be fine. Click here to Pin Spicy Pork Chops, … Continue reading →

Traditional Stuffed Red Peppers

Thyme for Cooking Posted on September 1, 2017 by KateSeptember 1, 2017
Stuffed Red Peppers

Almost…. Traditional Stuffed Green Peppers are one of the more maligned dishes that grace the American table. In many cases justifiably so. I have seen Stuffed Green Peppers in cafeterias and diners that don’t even vaguely resemble anything that I would want to eat. And I have tasted some that lived up (or should I say down to) that image. They were soggy, bitter, and disgusting. These are not those. … Continue reading →

Stir-Fried Green Beans with Peppers and Onions; Verona surprises

Thyme for Cooking Posted on July 23, 2017 by KateJuly 23, 2017

In the spring garden I have lettuce, spinach, radishes and chard. In the summer garden I have tomatoes, green beans, summer squash, onions, sweet corn and chard. In the fall garden I have tomatoes, winter squash and…. chard. The sweet corn is only around for a week or two, but the rest of the summer vegetables feed us for at least two months. At the moment we’re eating lots of … Continue reading →

Risotto, Sausage, Red Pepper, Caramelized Onions, errant turkey legs

Thyme for Cooking Posted on January 25, 2015 by KateJanuary 26, 2015

When we lived in Minnesota we went to the Renaissance Festival every year. The acts were fun, the artisan shops were interesting but it was always the food that caught our attention. We would skip breakfast and head out early so we had a sufficient appetite to sample anything and everything that caught our fancy. One of our favorites was the Knave Sandwich…. A simple roasted sausage smothered in grilled … Continue reading →

Brussels Sprouts, Red Pepper Stir Fry, a tree and a Rembrandt

Thyme for Cooking Posted on February 3, 2014 by KateFebruary 3, 2014

Are you a fan of Brussels sprouts? We love them… In all sorts of ways It seems that most people who don’t have only tried them steamed and mushy. In my opinion very few vegetables are at their best steamed and mushy. If you’re not a fan, try them stir-fried and crisp-tender. You may become a convert to this wonderful winter vegetable. Brussels Sprouts, Red Pepper Stir Fry Total time: … Continue reading →

Pasta with Yellow Tomatoes and Red Peppers; spring

Thyme for Cooking Posted on April 5, 2013 by KateOctober 23, 2017

I had such a fun time last summer…. chopping and freezing all the lovely green and yellow and orange and white tomatoes. I also froze lots of red Roma’s, which are all gone. Actually, everything is almost all gone. I put all the pretty colored tomatoes to good use over the winter.  I used the orange in a Smoked Salmon Lasagne, and the white in White Chili. The green made … Continue reading →

Greek Chicken on Orzo; Conversations

Thyme for Cooking Posted on November 9, 2011 by KateAugust 11, 2013

Men are from Mars; Women are from Venus? I don’t think so…. I think it’s more like: Men are from Pluto; Women are from Earth. How can a simple, straight-forward conversation go so awry? We weren’t discussing anything technical, esoteric or even the slightest bit complicated. It was about a rodent! First, the set-up: I normally let the girls out through the barn in a misguided and fruitless effort to … Continue reading →
