We’ve been eating a lot of shrimp lately.
There are three simple reasons….
We like shrimp.
I can now buy cleaned shrimp.
Mon mari was not overly fond of cleaning shrimp and I can’t. I have no problem eating shrimp but my hands break-out in a rash if I clean them. (My story and it’s worked for years.)
The weather …
mon mari’s least favorite protein: Fish
Okay, maybe not least…. I think he would attribute that to tofu and lentils.
And I think he actually likes fish – he just likes to complain about it better.
His complaining does make me strive to be more creative with our fish dishes.
Since he loves spinach, this …
Mon mari and I have an ongoing disagreement about the proper way to make lasagne.
Neither of us is in favor of our college-age staple ingredient of cottage cheese…..
I like to use no-cook noodles because it’s easy (and I’m lazy) but no-cook noodles require a bit more liquid in order to get the noodles properly done.

I saw the first artichokes last week and the avocados have been good.
I broke down and bought …
I’m off playing again….

I saw something similar to this somewhere…. As is typical of me.
At 3:00 in the morning I woke up and started thinking about dinner….. As is also typical of me.
And so a recipe is created.
I made this for New Year’s Eve dinner to go with a venison tenderloin that I simply roasted. It was meant to be …
