Veal Marengo, with Shallots and Mushrooms, an epiphany

Thyme for Cooking Posted on December 4, 2013 by KateNovember 4, 2017

I don’t remember why or how this became a tradition. I know that it’s only my tradition. But as soon as I start thinking about decorating for Christmas I get a craving for Veal Marengo. I’m not sure when I started making it, but it’s been a few years. I’ve done it in the oven, in a crock pot and on the stove top. Whatever the method, it’s delicious – … Continue reading →

Risotto alla Osso Buco

Thyme for Cooking Posted on November 30, 2012 by KateOctober 7, 2017

I’ve been in a lazy cooking mood lately… I want quick, easy, warm and comforting. In my kitchen that means risotto. Risotto alla Osso Buco Total time: 30 minutes  Ingredients: 2/3 cup Arborio rice (or other rice specifically for risotto – Carnaroli or Vialone Nano) 1/3 cup (3oz, 90ml) dry white wine 2 1/4 cups (18oz, 540ml) chicken stock 1/2 onion, chopped 1 tbs butter 1/2 cup (2oz, 60gr) Parmesan … Continue reading →

Braised Veal with Olives and Capers

Thyme for Cooking Posted on December 19, 2011 by KateFebruary 8, 2019

I think I’m back. But I’ve thought that before. The most recent was when I uploaded the photos for this update. Photoshop very politely informed me that I had already activated the software twice, which is (apparently) my limit, so could I please deactivate one and then they would happily activate the one I was trying to use. Or, I could buy another copy, whichever I preferred. To be honest, … Continue reading →

Veal Braised in White Wine; Shopping conundrums

Thyme for Cooking Posted on October 16, 2011 by KateNovember 5, 2017

While I take a break visiting family, step back with me in time to 3 years ago, when we were homeless, to the beginning of this project…. And all of our frustrations: I have concluded, in my vast and intensive study of my fellow humans, that everyone has a ‘thing’ which, totally out of proportion to the rest of his or her lifestyle, is deemed not worthy of expense. The … Continue reading →

Veal Saltimbocca; Shipping the shopping

Thyme for Cooking Posted on September 26, 2009 by KateOctober 27, 2019

I confess. I like to shop. I don’t do it very often, and, fortunately for my wallet, I like window-shopping best. Still, being on my own in the US for 2 weeks, it was inevitable that I succumbed to that great American past time. What really clinched it for me was the new (to me) US Post Office’s flat rate shipping boxes. One can ship up to 20 lbs (9 … Continue reading →

Risotto with Veal and Leeks; the Tile!

Thyme for Cooking Posted on March 23, 2009 by KateOctober 15, 2017

You know how some things always ‘seem like a good idea at the time’? Tiling our kitchen counter and walls seemed like an excellent idea at the time. And it seems like an excellent idea now that it’s done. But, during the two weeks between laying the first tile and wiping off the last bit of grout, it lost some of its allure. Words were spoken. There was a lot … Continue reading →

Veal and Shallots in Red Wine; Valentine’s Day…. Hmmm…

Thyme for Cooking Posted on February 8, 2009 by KateNovember 4, 2017

Veal and Shallots in Red Wine We don't celebrate Valentine's Day. I told that story last year…. We try not to remember that fateful night, those many years ago… Although, in discussing  colors for the kitchen the other day, mon mari remembered that I had painted his kitchen blaze orange and canary yellow in retaliation (he was away for a week, I was house-sitting).  As he doesn't usually remember things … Continue reading →
