Lemon Chicken Rice Soup; a failure and a success

Thyme for Cooking Posted on November 22, 2017 by KatieJanuary 26, 2018
Lemon Chicken Rice Soup

The other day I had my first slow cooker failure. It should have been simple. It was soup. How can one screw up soup? Apparently with ease. It was a simple premise: we were going out for lunch which I knew would be long and a lot of food. I decided soup would be perfect for dinner that night and doing it in the slow cooker would be easy. I … Continue reading →

Hamburger Stroganoff; Comfort foods

Thyme for Cooking Posted on March 31, 2013 by KatieNovember 4, 2017

They say that with age comes wisdom. I’m not sure if it’s wisdom or simply acceptance. I have learned that when I’m a bit ‘under the weather’ I cease caring about anything. I have come to understand that if I cease caring, chances are I’m sick but just don’t know it yet. The wisdom part, or acceptance part, is not forcing myself to ‘accomplish something’ in this state because I … Continue reading →

Cauliflower, Cheese and Egg Casserole; The Bunny Slayer

Thyme for Cooking Posted on February 27, 2013 by KatieAugust 10, 2013

I am such a bad blogger. I have a habit of reading other food blogs (that’s a good thing), finding recipes I like (also a good thing), forgetting where I saw the recipe (that’s a bad thing) and deciding to make it anyway as best I can from memory. A good blogger would remember the original poster / creator of the recipe and give proper credit. I’m a bad blogger. … Continue reading →

Oven Poached Salmon with Dill and Caper Sauce

Thyme for Cooking Posted on February 17, 2013 by KatieAugust 10, 2013

I usually bake salmon in the winter; mon mari cooks it on the grill in summer. I never poach it, although that’s a traditional method for cooking salmon. Mon mari doesn’t like the idea of poaching. He doesn’t like the idea of ‘boiling’ food. We struggle with soups, stews and braises…. The ‘oven poaching’ was a compromise. Oven Poached Salmon with Dill and Caper Sauce Total time: 25 minutes  Ingredients: … Continue reading →

Noodles with Beef and Savoy Cabbage; No mail on Saturday?!?

Thyme for Cooking Posted on February 10, 2013 by KatieOctober 23, 2017

My mother did not make ‘pasta’. She made Creamettes or noodles. She didn’t make ‘skillet dinners’ or ‘stir-fries’ or even ‘casseroles’. She made hot dishes. She would have loved this. Think of it as comfort food without all the calories. Noodles with Beef and Savoy Cabbage Total time: 30 minutes  Ingredients: 12oz (360gr) ground beef (mince)  1 medium onion, chopped 1 rib celery, chopped 2 garlic cloves, minced 3 cups … Continue reading →

Easy Chard Gratin; meeting more of the family

Thyme for Cooking Posted on October 1, 2012 by KatieSeptember 4, 2019

I originally made this gratin with spinach – frozen spinach, actually.  I always keep a bag of frozen spinach in the freezer and this is a perfect quick vegetable dish when the fridge is empty. Then I branched out… and discovered it works with any vegetable.  Or, at least it works with all the ones I’ve tried. Especially other dark leafy greens. Easy Chard Gratin  Ingredients: 8oz (250gr) chard, leaves … Continue reading →
