I was thinking Boeuf Bourguignon, but I didn’t have any beef.
I had ‘chops’ that I had just cut off a pork loin and I had mushrooms. I didn’t really feel like fussing much so I decided to toss everything into the slow cooker.
Sometimes, an impromptu recipe and lazy attitude come together nicely. And we were both hungry for pasta.
We spooned it over fettuccini and were happy. Winter squash on the side, of course… ’tis the season.

The pork got very tender in the slow cooker, making a great ‘ragu’ for the pasta.

Ingredients
- 10oz (300gr) pork, cut into bite-size pieces
- 4 shallots, chopped (about 1/2 cup)
- 4oz (120gr) mushrooms, quartered
- 1/2 cup (4oz, 120ml) red wine
- 1/2 cup (4oz, 120ml) beef broth
- 1 tsp paprika
- 1 tbs tomato paste
- 2 tbs cornstarch dissolved in 4 tbs water
- 4oz (120gr) fettuccini
Instructions
- Put all the ingredients, except fettuccini and cornstarch, in the slow cooker.
- Stir well, cover and cook, low heat, for 5 hours.
- 30 minutes before serving:
- Dissolve the cornstarch in water and stir into the pork.
- Cook pasta in boiling water according to package directions, app 12 minutes.
- Drain pasta and divide onto 2 plates.
- Spoon pork & sauce over and serve.
Notes
You could use all red wine or all beef broth. I used more cornstarch then usual as we wanted a thicker pasta sauce.

There are a lot of things I like about having a puppy…. and a lot of things not so much.
He drives me crazy most of the time because he’s a puppy! He wants to play – with me. And he chews / eats everything: dirt, grass, sticks, his bed, my rugs. He steals wood from the fireplace and destroys indestructible toys faster than I can buy them.
He is, finally, starting to behave a little bit, and seems to understand the word NO – but only briefly.
Strangely, one of the things I enjoy most about having a dog again are our sunrise walks.

A beautiful sunrise has been rare, recently, as it’s usually raining. But even in the rain the early morning walks are peaceful. Hector behaves and I have a quiet start to my day.
Until we get inside and he goes crazy over breakfast.

Love this recipe! I’m going to make this one. I have a lot of pork in the freezer because it’s the cheapes meat right now. My grocery bill has literally doubled this past year so I’m shopping the ‘manager’s specials’ section and it’s usually mostly pork.
Beau is driving me crazy in the morning especially. He’s so full of energy! We have a Gates Rubber Ball that was a promotional item from the Gates Rubber company years and years ago that’s completely indestructible. You can find them occasionally now on eBay for around $20, with shipping. I actually have two, and he’ll play with that thing for hours, but he keeps bringing it to me all the time for me to throw it. I’m constantly being slimed by him though when he drops it on me so my clothes are slimed, the chair is slimed, my slippers are slimed…for hours. I know he’s making up for lost time, but sometimes, I’m so tempted to just toss him in his crate so I can have one uninterrupted hour of peace. He’ll grow out of it, I know that, but holy crow.
Pork is usually cheap here, too. I buy loin roasts and cut them up myself.
I’ll have to look for that ball. At the moment Hector is destroying everything in minutes. A heavy duty knotted rag toy – for throwing… shredded in 10 minutes. But he does love his rock! Can’t hurt that but I’m so afraid I’ll hit him in the head when I throw it. He likes to jump in front of me lol
