I’ve been making these since the beginning of time.
They’re easy, require little to no attention, and are low in calories (needed sometimes with all the picnic food).
I have 2 basic recipes. This is the first, early summer recipe.
I’ll do the other later, once the veggie patch has started to produce.

The veggies are cut into big chunks and cooked, wrapped in foil, on the barbecue grill. An easy, no fuss summer side. Use whatever herbs you like.

Ingredients
- 2 medium potatoes, cut into chunks about 3/4″ (2cm)
- 3 medium carrots, cut into sticks 1 1/2″ (4cm) long
- 1 onion, cut into wedges
- 1/3 cup (3oz, 90ml) chicken broth
- 2 tsp dried or 2 tbs fresh herbs
Instructions
- Tear off 2 pieces of heavy duty aluminum foil about 15 inches long and put each on a plate.
- Divide the vegetables evenly between the 2 plates keeping in the center of foil.
- Pat the foil down so it takes the shape of the plate – otherwise the chicken broth runs off.
- Divide chicken broth between the 2 plates.
- Sprinkle with herbs.
- Bring long ends of foil to middle and fold down.
- Fold in ends so you have 2 nice packets with the veg and broth.
- Put on barbecue grill – indirect heat (not over the coals), cover and cook for 30 minutes.
- Check to make certain everything is done.
- Remove vegetables from packets and serve.
Notes
You could put in 400F oven for 40 minutes.
This is ‘cooking by sound’: When the packets start sizzling, they are cooking. When they stop, they are done…. But if they don’t stop, check them after 25 minutes. Just open one part way and poke a knife into the potatoes. They will continue to cook, after removed from heat, if left wrapped.

I rarely do assembly photos, but, sometimes, a photo helps.
The packets, folded and ready to go on the barbecue. We usually do these on the gas grill. The packets go on the side that is not lit. Pork chops or chicken go on the other side.

I need to do this. Husband would love it with the carrots. I do something similar with potatoes, onions and butter, but haven’t done the carrots. I usually make them when we grill steaks. No broth though.
The broth cooks off and is really just a way to flavor them / salt them. Potatoes, onions, & butter sounds good…. Hmmm…
