Grilled Salmon with Yogurt Sauce; my gym

I like sauces.

I can and will eat foods without sauce.

Sometimes I even choose not to have a sauce.

But, when I’m eating the same or similar food often, I often opt for a sauce.

Sauces offer a variety of flavors. We eat salmon almost every week. Some of those weeks need a sauce.

Grilled Salmon with Yogurt Sauce

The salmon, marinated for 15 minutes, grilled, and served with a hot-sweet sauce. Something different for the grilling season.

Ingredients

Scale
  • 2 salmon fillets, 12oz total (360gr each)
  • Marinade:
  • 2/3 cup (5oz, 150ml) white wine
  • 2 cloves garlic, minced
  • 1 tbs lemon juice
  • 1 tbs fresh parsley
  • 2 tsp fresh tarragon
  • Brown Sugar Yogurt Sauce:
  • 1/3 cup (3oz, 90gr) Greek yogurt
  • 2 tbs Dijon-style mustard
  • 2 tsp brown sugar  

Instructions

  • In a flat dish, just large enough for the salmon, mix wine, garlic, lemon, and herbs.  
  • Add salmon, turning once to coat, and allow to marinate for 15 – 25 minutes. 
  • Put salmon in a grill basket or on mesh grill pan.
  • Grill for 10 – 12 minutes, skin-side down, with the grill cover closed.  
  • Sauce:
  • In a small bowl, whisk together the yogurt, mustard and sugar. Set aside.
  • To serve:
  • Slide the salmon off the skin if needed and place on plates. 
  • Spoon some sauce on the side and serve.

Notes

Substitute dried herbs for the fresh; sour cream for the yogurt.
Be careful not to overcook the salmon. It will be done when it flakes easily, slightly pink in the center is fine.

I have a Universal Gym.

When we lived in the U.S. I went to a proper gym with all the proper equipment.

When we moved to Ireland, the few gyms I saw didn’t look like the would welcome women. (This was almost 3 decades ago).

Andorra was in the mountains. One did not need a gym when all the exercise needed was available on your doorstep.

When we moved to ‘the middle of nowhere’, France, I decided I needed my own, personal gym.

So I bought one.

Yes, I use it.

3 days a week I do a weight routine on my ‘gym’.

Not everyone is lucky enough to have a gym with a view.
