My mother was a very good cook. She just didn’t enjoy it.
She loved baking but that’s another story…
Regarding cooking: she had one way of cooking most foods. This meant that chicken was pan-fried, covered, and finished on low heat; beef roast was browned in a skillet, then roasted; pork chops were fried fast and served with pan drippings, etc.
To be fair – she had 3 ways of cooking potatoes: most often they were boiled, less often fried with onion, and, rarely, scalloped.
She cooked green beans one way: in a little bit of water with bacon and onion. When they were very done she added heavy cream and some thick slabs of Velveeta. I absolutely loved her green beans. I could and would eat them all if allowed.
I don’t make them like that… because I would eat them all and they were rather caloric. Besides, funniest thing, in a country with over 300 different cheeses there is no Velveeta!
I now like green beans in many different ways. If you like green beans you’ll love this. It’s so easy, nothing fancy… just the taste of summer’s best.
I don’t even cut them.

Everyone loves roasting vegetables. But in the summer, when it’s hot and the beans are just picked, I really like a quick skillet sauté. This has to be done with fresh green beans.

Ingredients
- 6oz (175gr) fresh green beans, trimmed, left whole
- 2 tsp olive oil
- 1 tsp butter
- a bit of nice sea salt
Instructions
- Heat oil and butter in a large skillet over medium-high heat.
- Add beans and sauté, turning and shaking, until light brown and blistering in spots.
- Remove, sprinkle with salt and serve.
Notes
I use oil and butter together. The oil keeps the butter from burning and I like the flavor butter gives.

I don’t like figs.
At least I don’t like our figs.
We have 2 large fig trees. To me, the figs are just sweet. They have no other flavor than sweet. I like tart.
My neighbor likes them and picks a bunch to make fig jam. The starlings like them a lot. When I go out in the evening the fig trees are alive with birds, chattering away.
And Hector likes them.
He’s started bringing them in the house to eat.
I have no idea how many he eats when he’s outside by himself…. The girl dogs always ate them, too so I assume they’re not harmful.
My friend who has horses told me that her horse is almost uncontrollable when he spots a fig tree when they’re out riding. He races to the tree and grabs all he can.
I guess animals like sweet.
