This is a quick post because it’s Christmas, I have a movie to watch, and my ability to be online is a bit haphazard.
My mobile works very well as a hotspot – until it doesn’t.
Sometimes I know why, sometimes I don’t.
There are so many things that need to be turned on and set and turned off…. And then I do something like actually use it as a phone and it all collapses.
We don’t have a landline.
It was all working fine earlier, I wasn’t doing anything else on it, and it just stopped. It took me forever to figure out that I have the ‘Do Not Disturb’ configured to turn on for the 3 hours I’m in French class. I’m obviously not in class today but I forgot to so inform my phone.
I turned the Do Not Disturb off and everything started working again.
I made this with chicken, but leftover turkey would be great…..

This is an easy dinner – everything but the pasta is cooked in a skillet, with the pasta added at the end to finish.

Ingredients
- 2 chicken breasts, boneless, skinless, cut into bite-size pieces
- 1 medium onion, vertically sliced
- 12oz (360gr) butternut squash, cut into bite-size pieces
- 2 cloves garlic, minced
- 2 tbs parsley
- 1 tsp smoked paprika
- 1 tsp za’atar
- 1 cup (8oz, 240ml) chicken broth
- 1 tbs cornstarch (maizena) dissolved in 2 tbs water
- 1/3 cup (3oz, 90gr) Greek yogurt
- 1 tbs olive oil
- 1 1/4 cups (4.2oz, 125gr) pasta, bite size
Instructions
- Cook the pasta according to package directions.
- Drain 1 minute early.
- In a large skillet heat oil. Sauté paprika briefly (10 seconds).
- Add onion and garlic, sauté for 5 minutes.
- Add butternut squash, chicken and sauté until chicken is cooked through.
- Add parsley, za’atar, chicken broth, cover and simmer until squash is done, about 10 minutes.
- Add cornstarch mixture and stir until thickened.
- Add pasta and heat to a simmer. Cook 1 – 2 minutes.
- Stir in yogurt and serve.
Notes
Za’atar is a North African spice mix of thyme, oregano or marjoram and sesame. If you don’t have it substitute thyme or oregano or whatever you like.
You can use leftover turkey instead of chicken – just add it at the end, with the pasta.
We got a new smart TV.
In case you don’t know…. A smart TV isn’t smart without the internet. I can’t even access all of the set-up functions.
We have a dumb TV.

We had a busy Christmas Eve but a very quiet yesterday so that was nice. At some point this week, we’ll have prime rib soup from the bones off our Christmas Eve prime rib. It’s a yummy favorite here. 🙂

It’s definitely soup season here, too. I made a big pot of pumpkin soup – from a big pumpkin lol
We also had a quiet Christmas – but 2 ‘apera’ (drinks) parties during the week so we were busy enough for us. We have ‘provisional’ internet service – no idea when it will actually be repaired.
