Pork Chops, Hungarian-Style; Madrid

People who know me and / or read this blog know that I rarely buy pork chops.

I quit buying them shortly after moving to France.

They were always too thin.

Instead I buy a pork loin and cut my own boneless chops. Normally I cut chops that are about 6oz (180gr) each, trimmed, which is perfect for us.

A few weeks ago there was a ‘pork fair’ and I saw a package of boneless chops that looked ‘right’.

I bought them.

They were a little thicker than the chops I remember buying in the past, but still rather thin, about 4oz (120gr) each.

So I did 3.

Pork Chops, Hungarian-Style

My pork chops were thin so we had 3. If yours are thicker you might increase the simmering time by 5 – 10 minutes.

Ingredients

Scale
  • 23 pork chops, depending on size, 12oz total, 350gr
  • 4 tsp olive oil
  • 2 tsp paprika  depending on how spicy you like it
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1/2 tsp thyme
  • 1 bay (laurel) leaf
  • 1/3 cup (3oz, 90ml) beef broth
  • 1/3 cup (3oz, 90ml) white wine
  • 1/3 cup (3oz, 90ml) Greek or plain yogurt or sour cream

Instructions

  • Heat 2 tsp oil in medium skillet over medium heat.
  • Add pork chops and brown well on both sides, about 8 minutes, total.
  • Remove and set aside.
  • Add remaining oil, paprika and sauté 1 minute.
  • Add onions, garlic, and sauté until tender, about 5 minutes.
  • Add remaining ingredients, except yogurt, to skillet and heat to boiling.
  • Return chops to pan, reduce heat, cover and simmer 20 minutes.
  • Uncover, increase heat and reduce pan juices to about 1/3 cup.
  • Turn heat off.
  • Remove chops and put on a small platter.
  • Remove bay leaf.
  • Stir yogurt into pan juices and pour over chops.  Serve.

Notes

Substitute sour cream for the yogurt and more broth for the white wine.

This was the park next to the Prado in Madrid, We didn’t go inside but walked along the fence.

It was a perfect day – just warm enough with clear, blue skies.

I could walk for hours in a city….

I love to look at the buildings, the people, the street art.

So different than the farm fields I see when I walk here….

  1. I’m torn when I walk in a city, even if I haven’t been there before, between gawking at the buildings and watching the people. I used to enjoy shopping at the mall, when we still had them, more for watching the people than the actual shopping. Not at Christmas though. Way, way too crowded then. I’ll go to our little town now that’s close to me, when the weather is nice and sit outside the local coffee shop and do the same. But it’s right on main street so it’s not quiet at all because it’s a one road in/out town and it’s busy. I have to be in the right mood.

    • I used to love Christmas shopping in actual towns on streets rather than in malls. I hate shopping to buy something but love wandering the streets and wandering through the stores.
