Chicken breasts can be boring. They can also be dry and even (horrors!) somewhat tasteless.

My mother was a very traditional cook. She made roast beef or pork or chicken and it always had pan gravy.

I loved gravy. If not watched (as a child) I would eat it with a spoon, skipping the potatoes.

Now, as an adult with my own kitchen, I make sauces…. especially with chicken breasts.

Prosciutto-Wrapped Chicken Breasts

Wrapped in ham with a bit of cheese inside. these flavorful chicken breasts can be prepped ahead for an easy dinner for 2 or a party.

Ingredients

Scale
  • 2 chicken breasts, (12oz, 360gr total) boneless, skinless
  • 12oz (50gr) Gruyère or other hard cheese, thinly sliced
  • 4 slices Prosciutto (about 3oz, 90gr)
  • 1 tbs olive oil
  • kitchen string
  • Pimiento Sauce:
  • 5oz (150gr) pimiento (pimento) or roasted red peppers, drained
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1 tbs tomato paste 
  • 1 tbs Greek or plain yogurt
  • 1/4 cup (2oz, 60ml) chicken broth

Instructions

  • With a sharp knife make a long slit in the edge of the chicken breast, cutting horizontally and being careful not to cut through the other side.
  • Tuck the sliced cheese inside.
  • Lay 2 slices of Prosciutto side by side. 
  • Close the chicken breast and lay it on the Prosciutto at a slight angle.
  • Roll and wrap, covering the chicken breast completely in the ham, as best you can.
  • Wrap the entire parcel with kitchen string to hold it together.
  • Heat oil in a medium skillet over medium heat. 
  • Add chicken and brown well on all sides, about 10 minutes total.
  • Reduce heat to low, cover and let finish cooking, another 10 – 15 minutes.
  • Remove chicken from heat.
  • Snip the string in a few places and remove.
  • Spoon some Pimiento Sauce onto the plates, place the chicken in the center and serve, any remaining sauce on the side.
  • Pimiento Sauce:
  • Put pimiento/pepper, garlic powder, and chili powder into a blender. 
  • Add just enough of the chicken broth to enable it to purée. 
  • Pour into a small saucepan and stir in tomato paste. 
  • Gently heat until it starts to simmer. 
  • Stir in yogurt.
  • Keep warm until needed

Notes

 Cut the chicken on the ‘straight’ edge of the breast. You should have a pocket the shape of the breast with 1/2 inch of ‘uncut’ chicken around 3 sides.
Add more paprika or hot sauce if you want more heat.

It’s been warm enough most days that we are out working in the garden. Hector, of course, is carefully monitoring everything either of us does.

He attacks the lawn mower and the strimmer, attempts escaping at every opportunity, and chews / eats everything that he can get in his mouth. Nothing is safe.

He tries (and usually succeeds) in taking all of his toys outside every day. Which means that I have to spend however many minutes to find them and bring them back in before dark or he cries.

Yes, he cries when he can’t find whichever toy he is fixated on at the moment.

He can be a good boy…. He just doesn’t usually choose to be.

He says ‘Hey’.

  1. The chicken looks lovely! I usually only use thighs because as good a cook as I am, the only time I can do a moist chicken breast is if I egg and bread it. I’ll try this though since it’s wrapped.

    Beau has his Ball. When they refinish the floors, we’ll have to board him for at least four days and I’ll have to send his Ball with him or he’ll do nothing but whine the entire time. He’s fine playing with the other dogs during the day, but once he’s in the kennel for the night, he’ll have to have his security toy or he’ll be lost. He takes it to bed here every night. Poor, spoiled doggos, yes?

    • Hector changes his ‘favorite’ regularly. For awhile it was rocks. He had an extensive rock collection. Now he won’t look at them. He loved his pink ball for about 3 weeks. It’s been in the ‘toy box’ untouched for days now. He still likes all of his BeneBones (he has 4) and one always goes into his crate at night. Funny, tho – he loves a Kong stuffed with peanut butter. but if I give it to him when we put him in the crate to leave the house he won’t touch it. As soon as we come home and let him out he runs back to the crate to get it. Funny and spoiled.

      • Beau does the same thing with The Ball! He is totally obsessed with it, constantly carrying it everywhere, but when we leave the house, I put it in his kennel with him and it’s still in the exact same spot when we get home. I check on him through the camera and I know he doesn’t touch it at all, but the minute I open that door on the kennel, he has to grab The Ball before he’ll even come out. You’re right, Funny dog and yes, also spoiled.
