Chicken Breasts with Goat Cheese & Mushrooms

We love goat cheese.

Actually, we love all types of cheese: cow, sheep, goat….

But I particularly like the soft goat cheese for its ability to quickly become a sauce. It’s like cream cheese but with more flavor.

Bit of useless info: here in France cream cheese is called ‘Philadelphia’ – regardless of the label. Actual Philadelphia Cream Cheese can be found on rare occasions.

This is a quick pan sauce, thickened with creamy goat cheese.

Ingredients

Scale
  • 2 chicken breasts, boneless, skinless
  • 1 small onion, chopped
  • 4oz (120gr) mushrooms, trimmed, sliced
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1 tbs Worcestershire
  • 2oz (60gr) soft goat cheese
  • 1 cup (8oz, 240ml) tomato sauce
  • 1 tbs olive oil

Instructions

  • Heat oil in medium nonstick skillet.
  • Add chicken breasts and brown on both sides, about 7 minutes total. 
  • Remove.
  • Add onions, mushrooms, paprika, cumin, Worcestershire sauce to pan and sauté 5 minutes.
  • Return chicken to pan, add tomato sauce, oregano.
  • Cover, turn heat to low and simmer 15 minutes, until chicken is cooked through.
  • Remove chicken and cover with the pan lid to keep warm. 
  • Add goat cheese to skillet, stirring well to melt and combine.
  • Spoon mushroom sauce over chicken and serve.

Notes

Substitute cream cheese for the goat cheese.

We’ve had a cold week.

Brilliant sunshine but low temps.

Not Minnesota cold, but cold for us. High’s around 6C (43F) and low’s around -5C (23F).

There’s ice in the bird bath and the pool.

There had been ice in the puddles leftover from last week’s rain but Hector decided he likes ice. He, very methodically, went from puddle to puddle, cracked the ice, and ate it.

He had to wait until noon for it to thaw enough to break but he was patient.

He’s been spending a lot of time outside. Apparently he likes the sunshine and doesn’t notice the cold.

Besides, the bunnies like the sunshine so he has something to watch.

And I have a few minutes peace inside.
