I don’t remember when I started drinking sherry, or why I started drinking sherry.
It’s not the usual tipple for someone growing up in Wisconsin.
I think it had something to do with cost, storage, and appearance.
I had a lovely crystal decanter (again, no idea why or how). I couldn’t afford to fill it with brandy and wine wouldn’t have lasted long.
I digress….
Let’s just say I love sherry – both to drink and to cook with.

This is a slightly spicy, slightly tart sauce; simply reduced a bit and served with the onions.

Ingredients
- 2 chicken breasts, boneless, skinless (12oz, 360gr total)
- 1 onion, chopped
- 3 tbs sherry vinegar
- 3 tbs dry sherry
- 4 tbs chicken broth
- 1/2 tsp paprika
- 1/2 tsp cumin
- 2 tsp olive oil
Instructions
- Heat oil in medium skillet over medium-high heat.
- Add paprika, cumin, and sauté 1 minutes.
- Add onion and sauté 5 minutes, just until starting to brown.
- Move to the side, add chicken breasts and brown on both sides, about 8 minutes.
- Add vinegar, sherry, broth, cover, reduce heat and simmer 10 minutes.
- Uncover and reduce sauce slightly.
- Serve.
Notes
I cut the chicken breasts in half to make them easier to handle – and a nice presentation.
Substitute 1 tsp chili powder for the paprika & cumin.

I think Hector is becoming an adult.
Sort of….
He pulls less on the leash when we walk and stops pulling quickly when I tug or say ‘stop’. He still forgets himself often. But it’s pretty exciting walking this time of year with all the bunny and deer and boar and whatever scents everywhere.
He will actually heel very nicely – as long as I have treats in the hand next to his head.
He sits when I tell him – and he stays as long as he can see me.
And he will now come whenever I call – as long as we are in the fenced yard and there are no bunnies running by.
Hmmmm….
I thought we were making better progress until I just re-read this.
Sigh….
But there IS hope.
