Grilled Lamb Chops with Lemon & Rosemary; Lilies

We saw the farmer that we buy lamb from at the Hunt Dinner last week. He didn’t mention lamb.

Even after all the years we’ve lived here it’s still a challenge for me to remember the French way of doing things.

In the U.S. there is a saying that ‘the squeaky wheel gets the grease’. For those who don’t understand that means that if one complains / reminds / etc. one may be able to get the issue handled more quickly.

That doesn’t work here. Attention will be paid at the appropriate time and not a second sooner. No point in talking about it before then.

The farmer will call us when he has a lamb for us. It will be sometime between now and Sept.

Luckily, for us, we have another source.

Is there a better match than lamb and rosemary?  This simple marinade, with a bit of soy sauce and garlic, imparts a lot of complex flavors to our lamb chops.

Ingredients

Scale
  • 4 – 6 center-cut lamb chops – depending on size
  • 2 tbs lemon juice
  • 1 tbs soy sauce
  • 2 tbs oil
  • 1/2 tsp garlic powder
  • 2 tsp rosemary

Instructions

  • Mix lemon juice, soy sauce, oil, garlic powder, and rosemary. 
  • Pour over lamb chops and allow to marinate for 15 – 30 minutes. 
  • Remove chops and discard marinade. 
  • Cook on barbecue grill for 2 – 5 minutes per side depending on thickness and desired degree of doneness. 
  • When done to your liking remove from heat and serve.

Notes

 We do ours on a hot grill 2 minutes per side for medium rare.  If you are unsure take one off, cut into the center and peak.  
You could also do them in a hot skillet for the same amount of time.

My mother loved lilies.

Her ‘flower beds’ were her pride & joy, and the lilies always were her favorite.

She even sent me a box of 6 lily bulbs when we lived in Andorra.

I was amazed that they actually made it through customs, but then I remembered that Andorra is not part of the EU. It’s its own country, thank you very much.

I planted them. They bloomed.

When we moved to the Vendee I dug them up and took them with us.

A few survived.

When we moved here I dug those up and moved them.

This one survived the move and all of the puppies and dogs that have guarded the fence over the years.

It’s multiplied.

My mother would be pleased.
