Grilled Pork Tenderloin with Rosemary

Here, like most places, we are seeing some prices go up.

It started during the pandemic with an increase in the price of chicken. It likely had something to do with the avian flu.

Luckily for us pork is still incredibly reasonable and very good.

Also, luckily for us, we have a friend who keeps chickens and does her best to supply all of the neighbors with eggs.

The pork tenderloin is ‘butterflied’ rather. By opening it up it soaks up more marinade and cooks faster – both things we like.

Ingredients

Scale
  • 12oz (360gr) pork tenderloin, cut in half lengthwise
  • 1/3 cup (3oz, 90ml) Balsamic vinegar
  • 1/3 cup (3oz, 90ml) soy sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 3 large sprigs rosemary

Instructions

  • Put all ingredients except pork and rosemary sprigs into a bowl and mix well.
  • Put the rosemary sprigs inside the pork.
  • Put the pork into a small dish, pour marinade over and let marinate for 2 – 6 hours, turning occasionally.
  • When ready to cook, open up the pork.
  • Cook on barbecue for 15 – 20 minutes, depending on thickness. Slightly pink is best.

Notes

I use low-sodium soy sauce – less salt and all the flavor.
We usually marinate it for 3 hours but anywhere from 2 – 6 is good.

There are always 1 or 2 sunflowers that stick up above the rest. It’s like they’re looking around for their friends…. or wondering WTF they are!

This is the view from the chemin or farm track that cuts between the 2 fields.

Our house is just behind that stand of trees on the right.

If you look really, really closely you can see Hector sitting in the corner of our yard, watching me.

I would have let him come with me except there are bunnies everywhere.

I’ve already had 2 dogs get lost in the sunflowers…. I don’t want to do it again.
