It’s been a stressful year, with a really stressful fall and really, really stressful week (so far).
I could show peaceful, soothing photos but I have the feeling they would be glanced at and ignored as people click back to the stress-inducing stuff.
I’m equally certain that no one is looking for recipes that take actual concentration to make.
The world is like a train wreck at the moment: no one wants to look but simply can’t help it.
So I give you simple food.
Everyone roasts the winter squashes and that is an easy way to prepare them but sometimes I just want to toss them into a skillet and get them done quickly.

Toss chunks of butternut squash in a skillet with some onion and herbs for a quick side dish

Ingredients
- 12oz (350gr) butternut squash 2 – 3 cups small chunks
- 1 onion, chopped
- 10 – 12 fresh sage leaves, chopped
- 1 tsp paprika
- 2 tsp olive oil
- 2 tsp butter
Instructions
- Heat butter and oil in a medium skillet over medium heat.
- Add squash, onions and sauté 10 – 15 minutes, until squash is nicely browned.
- Add sage, paprika and sauté 5 minutes longer. Serve.
Notes
Substitute parsley for the sage, or a smaller bit of rosemary.
