Carrots with Yogurt Dill Sauce

We have been between vegetable seasons lately.

The cauliflower, broccoli, and Brussels sprouts are on the way out – and look like they should have left a bit earlier.

The asparagus, artichokes, and peas are just starting.

Whenever there is a vegetable gap we always still have carrots. Apparently carrots have no season. Even when I was a child we always had fresh carrots year round.

I’m assuming it’s because they store well.

In honor of the vegetable that no one raves about but is always around, I will share a few of our favorite carrot recipes over the next few weeks.

We can’t eat asparagus every day….

Carrots with Yogurt Dill Sauce

Carrots don’t have to be boring.

Ingredients

Scale
  • 3 medium carrots (7oz, 210gr total), peeled, cut into rounds 1/4″ (.6cm) thick.
  • 1/3 cup (3oz, 90ml) chicken broth
  • 2 tsp dried dill weed
  • 2 tbs Greek yogurt

Instructions

  • Put carrots, broth and dill into a small saucepan or skillet.
  • Bring to a simmer over medium heat.
  • Reduce heat and let simmer until just tender, about 8 minutes.
  • Uncover and cook off all but 1 tbs stock.
  • Remove from heat, stir in yogurt and serve.

Notes

Substitute sour cream for the Greek yogurt.

Carrots with Dilled Yogurt

Another good choice: Mustard Glazed Carrots

I saw these small, gorgeous flowering trees this morning on our walk.

The flowers are tight up against the branches. It’s hard to tell from the photos but the bud is pink before it opens.

I’m quite sure it’s not a plum tree as they are done blooming – and they don’t look like this.

But…. they were beautiful, it was a lovely, warm day so I took the photos.

Mental note to see what kind of fruit show up this summer.

  1. I just love seeing blossom….I grew up on an orchard and hated it mostly, but did love it in spring .
