Pork Tenderloin Stuffed & Smoked

This is another easy smoking recipe.

I gave the info on smoking without a smoker, using a gas or charcoal grill, a few weeks ago with the recipe on Smoked Cod Filets.

I’m not going to repeat it as neither I nor Google like too much repetition so if you need a refresher check out the Cod.

To be nice, I’ll put a couple of hints with the pork….

Pork Tenderloin Stuffed & Smoked

This easy stuffing infuses the inside of the pork with flavor while the basting sauce and smoke does the outside. Remember, pink is perfect for pork.
The nice thing about smoking, besides the great flavor, is it’s a no fuss method of grilling outdoors and the meat stays moist and tender.

Ingredients

Scale
  • 1 pork tenderloin, 14oz (400gr)
  • 1 1/2 tbs chopped capers
  • 1 1/2 tbs chopped dry-cured Greek olives
  • 1 1/2 tbs whole grain mustard
  • 1/2 tsp paprika
  • Basting Sauce:
  • 2 tbs molasses
  • 1 tbs soy Sauce
  • 1 tbs Balsamic vinegar 

Instructions

  • Light the grill
  • Carefully slice the pork tenderloin in half the long way, almost all the way through. Leave about 1/3″ (1cm). 
  • Open it flat, like a book. 
  • Spread the mustard on 1 side.  
  • Sprinkle the paprika, olives and capers on the mustard.
  • Close the pork and tie securely with kitchen string.
  • Make basting sauce:
  • Combine all ingredients
  • To cook:
  • Smoke on a kettle-type grill for 30 minutes:
  • Put charcoal off to one side and light it. 
  • When the coals are hot and you are ready, put the food on the side opposite the hot coals (do not spread them out). 
  • Throw some wood chips on the coals and cover.
  • Baste once when you put it on the grill, once when you open the grill after 15 minutes to add wood chips and once when you take it off.
  • Remove pork and let rest 5 minutes. 
  • Remove string, slice and serve.

Notes

If using a gas grill: Light one side of the grill. Wrap the soaked wood chips loosely in foil. Poke a few holes in the foil and place on the grill over the hot side. Put your food on the opposite side, and close the grill cover. Leave it slightly vented or propped open an inch or so. The timing is roughly the same.

They finally got tired of me calling and sent a text message – it will be fixed next Monday, they say.

  1. I’m guessing they’re so busy installing that fixing is taking a back seat which is rather the wrong way of doing things if you ask me!

    I asked hubs about ‘smoking’ something using this method and got the stink eye and a ‘why would I want to do that when I have a smoker’ which is what I expected to get. I would be a bit scared to do this on our regular smoker because a tenderloin is so delicate so I think we’ll just continue to grill it.

    • Mine is much the same – but I can get him to throw some wood chips on when he doesn’t want to use the smoker – like for chicken breasts or pork chops.
      They gave us a ‘box’ to use, half the size of my phone, which is ok – except my PC is ethernet, not wifi and I have to move the box around to get the best reception. First world problems….

  2. Well, the ‘reply’ button isn’t working to nest this, so I’ll leave it here. TP-Link makes a really nifty wifi adapter for your desktop that works remarkably well that you plug into a usb adapter on the pc and you can have a wifi connection going in no time. That way, you wouldn’t have to move the box around. Just a thought and you can buy them on Amazon. I imagine you can get them there as well. They’re under $20 and oh, so worth it. I used one for a long time when my wifi card went out on my last laptop.

    • I had one that I used on the hubs old PC but I couldn’t find it. I’m just using my phone. I have to move the box for the (dumb) smart tv.
      When this PC goes I’ll get a mini with all that stuff. I got hubs a Beelink and love it. I mean, he loves it….
