Creamy Microgreen Guacamole Recipe

I’m intrigued….

I’ve never heard of microgreens.

I googled it.

The first entry that I saw was the online French company that I buy my seeds from.

Apparently, microgreens have been around awhile and I’ve totally missed it.

One of the things I’ve missed here in France is not being able to buy fresh sprouts at the supermarket.

Fine…. I’ll just grow my own.

What are microgreens?

If you’re not familiar with microgreens, they are essentially young plants that are harvested just after their first true leaves have emerged. They are smaller than baby greens and more flavorful than mature greens, making them a perfect addition to salads, sandwiches, and dips like guacamole. What’s more, they are incredibly nutritious, containing up to 40 times more nutrients than their mature counterparts. Incorporating microgreens into your diet is a great way to add an extra boost of vitamins and minerals.

The benefits of eating microgreens

Microgreens are not only flavorful and visually appealing, but they are also packed with nutrients. Studies have found that microgreens contain high levels of antioxidants, which can help protect against chronic diseases such as cancer, heart disease, and diabetes. They are also a good source of fiber, vitamins, and minerals, including vitamin C, vitamin K, iron, magnesium, and potassium.

What’s more, because microgreens are harvested so soon after germination, they often have a more concentrated flavor than their mature counterparts. This means that you can use less of them to achieve the same flavor impact, which can be helpful if you are trying to cut down on calories or sodium.

In conclusion, if you’re looking to take your guacamole game to the next level, give this creamy microgreen guacamole recipe a try. Not only is it delicious and versatile, but it is also incredibly healthy, packed with nutrient-dense ingredients that will leave you feeling satisfied and nourished.

  1. I am not a fan of microgreens. I don’t know what they do here, but they’re usually bitter. I don’t know that I’d include them in my guac. I don’t use cilantro in it either. I’m one of those few who don’t eat cilantro because it tastes like soap.

    • I also don’t eat it. I tried to explain to my new neighbor, who loves it, that it’s more than just ‘not liking it’. I may have gotten too descriptive as to what it tastes like to me lol

  2. Never heard of a micro green… but I admittedly am out of the cooking loop and it’s certainly not something you’d find in Morocco yet !!!!
