Shrimp with Tomato & Green Garlic Sauce

The spring veggie season is rapidly coming to a close – or it already has.

There was no green asparagus at the market this week but, luckily for us, the white asparagus season is several weeks longer. I bought a kilo.

However – there were only 3 of the big artichokes. I bought 2. And only 1 bunch of green garlic.

Another bit of luck: both my regular chives and the garlic chives are ready to be used.

We’ll be okay….

Shrimp with Tomato & Green Garlic Sauce

Shrimp, green garlic, and bacon make an easy, flavorful sauce for a quick spaghetti dinner.

Ingredients

Scale
  • 12oz (350gr) shrimp, cleaned
  • 2oz (60gr) bacon, 3 – 4 slices
  • 4 green garlic, trimmed, sliced, including most of the green
  • 2 tbs tomato paste
  • 1/2 cup (4oz, 120gr) Greek yogurt
  • 1 tsp paprika
  • 1 tbs olive oil
  • 4oz (120gr) spaghetti

Instructions

  • Cook pasta according to package directions.  
  • Drain, reserving a bit of pasta water.
  • Fry bacon until crisp.
  • Remove and drain on paper towels. 
  • Crumble when cool. 
  • Pour off any remaining fat.  
  • Add olive oil to skillet.  
  • Add paprika and sauté a few seconds. 
  • Add green garlic, shrimp and sauté until shrimp curl and turn opaque.  
  • Stir in 2 tbs pasta water and tomato paste.  
  • Heat through.  
  • Add yogurt and stir over heat for 1 minute.  
  • Remove from heat, add pasta, crumbled bacon and toss to combine and serve.

Notes

Use 1 large skillet for the bacon. You will use it to finish the dish.
If you don’t have green garlic, substitute 4 green onion, sliced and 2 cloves garlic, minced.

Speaking of my potager…. It is now officially ready for spring.

That should have happened a couple of weeks ago but life doesn’t always go according to plan.

I was off to a good start. I got the onions and lettuce all planted, all of the edges (that the roto-tiller can’t reach) cleaned up. I had about 3/4 of the rest hoed. Then the weather changed. It got cold, windy, and rainy.

I started doing other stuff. I strimmed (weed whip) around the main fence, cleaned out the herbs, and (horrors) cleaned the house.

Weather improved, sun came out and last Sunday I was back with my hoe. The clay had hardened in the part I hadn’t gotten to so it was a lot more work. I was determined to finish. There was rain on the horizon so I got a little too aggressive.

I didn’t finish but I did pull a muscle in my back.

So – on the positive side it was rainy the rest of the week so I didn’t feel guilty about not being outside working. On the negative side Hector wasn’t very happy with our short, slow walks all week.

All better today. I finished the hoeing without further injury. I believe a glass of wine is in order tonight.

Hector agrees. He’s promised a vigorous game of ‘kibble toss’ tomorrow.

  1. I’m sorry about your back! I’ve done the same in the past. Today, I finally have my first decent day to work outside and I have to go to Secretary of State to buy the tabs for my Mustang. I put it in storage in the winter and drop the insurance to the bare minimum and they won’t do tabs online without full insurance. They also don’t do walk ins anymore so the only appointment I could get was right in the middle of the day of course.

    I want my kitchen back. The cabinets are due in this week. Soon. I keep telling myself soon…

    • The Gov sites – make things easier but only sometimes. Our bank is now closed in the afternoon without an appointment. Rarely is an issue, until I’m running late with a check and it’s noon and I forgot.
